This hearty burrito will leave you feeling full but not heavy and you can make it with ingredients that you probably already have in your kitchen.

Veggie Burrito

1 can black beans, drained and rinsed
1 cup of your favorite chopped vegetables: peppers, onions, broccoli,
1 avocado, smashed
1 wheat, spinach or flour tortilla
1/4 cup cooked quinoa (if you have some leftover from another meal)
1/4 cup corn
Salsa, to taste

1. Mash the avocado and spread on the tortilla.

2. Add veggies, beans, corn and quinoa.

3. Drizzle (or load up!) your favorite salsa.

4. Wrap into a burrito and serve.
